Ingrédients

Mix together:

One sleeve of saltine crackers – broken up into small pieces (use food processor to chop)

1/3 cup of milk

add:

1 lb ground pork

2 whole eggs and one yolk

1/3rd cup parsley minced

2 teaspoons Dijon mustard

2 teaspoons of Worchester sauce

1 teaspoon of salt

¾ teaspoon of black pepper

½ teaspoon dried thyme

one onion that has been sautéed in 1 ½ tlbs butter until soft and then added 3 minced garlic cloves

mix these with pork only at first

then add:

1 lb 90% lean ground beef

mix gently

Glaze:

¼ cup ketchup

1 tablespoon light brown sugar

1 tablespoon cider vinegar

½ teaspoon of hot sauce

whisk together

Instructions

form on a piece of foil that is placed on a grid/rack which is on a pan that can hold the grease

into a 9 by 6 inch rectangle

bake in oven under broiler – (upper middle) for 5 to 7 minutes to dry out the surface

Then paint with the glaze

bake for another 3 to 5 minutes under broiler

lower to the lower middle rack and change oven to 350 degrees

bake for 45 to 50 minutes – 160 degrees internal temperature

ALTERNATIVE - Smoke it! 2 hours on 250 - should get to about 165, then add glaze
