Strawberry Lemon Sorbet Boats

4 lemons
250g frozen strawberries, halved
3 tablespoons maple syrup
Instructions
Cut lemons in half lengthwise. Scoop out the insides and add to a blender. Set aside the rinds for later.
Blend peeled lemons until smooth.
Strain the mixture through a fine mesh strainer to extract the juice.
Pour strained juice into an ice cube mold.
Freeze overnight until solid.
Add frozen lemon juice cubes and frozen strawberries to a blender.
Add maple syrup and blend on high until smooth and creamy.
Scoop into a container and freeze until ready.
Serve in hollowed lemon halves and enjoy!
