Ingrédients

Here’s how to make it 👇

4 ears of corn

2 cups diced peaches

2 cups diced Cherub Grape Tomatoes

3/4 cup Emporium Selection Tomato & Basil Feta Cheese Block, crumbled

1/4 cup fresh basil, finely chopped

1/4 cup Specially Selected Premium Sicilian Extra Virgin Olive Oil

2 tbsp Priano White Wine Vinegar

Salt and pepper to taste

Optional: 2 tsp Burman’s Dijon Mustard

Instructions

Preheat your grill to medium heat. Grill the corn for about 10 minutes, turning it every few minutes, until lightly charred. Let cool, then slice the kernels off the cobs.

In a small bowl, whisk together the olive oil, vinegar, salt, pepper and dijon (if using).

To a large bowl, add the corn kernels, peaches, tomatoes, feta and basil. Drizzle the dressing over the top and toss well to combine. Enjoy with a simple grilled protein or on its own!
