Chicken & Spinch Orzo

Ingrédients

1 tablespoon oil

1 ½ lb chicken breast, cut into bite-sized pieces

2 teaspoons Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon salt & pepper

1/2 tsp cayenne pepper (optional)

1 medium-sized onion, diced

3 garlic cloves, minced

1 tablespoon tomato paste

3/4 cup sundried tomatoes in oil, drained

1 tablespoon of sundried tomato oil (from jar)

1 cup orzo pasta

1 cup chicken broth (bone broth for added protein)

1 (15oz) can lite coconut milk (or heavy cream)

Large handful of spinach

1/2 cup grated Parmesan

Fresh basil, for serving

Instructions

To a bowl add chicken breast pieces and seasonings. Toss until coated.

Heat a skillet to medium-high heat, add oil and seasoned chicken breast pieces.

Cook chicken until browned, roughly 3 minutes each side. Set aside.

To the skillet add onion, garlic, tomato paste, sundried tomatoes and tomato oil. Cook until onions are softened, stirring often.

Add orzo, broth, coconut milk and chicken breasts back into the skillet. Cover and let simmer for 20-25 minutes, or until orzo is cooked.

Add spinach and grated Parmesan, and stir until spinach is wilted and incorporated, covering if needed to steam the spinach.

Serve with fresh basil and extra Parmesan.
