Chickpea blondies
1 can chickpeas
½ cup maple syrup
1/3 cup oat flour
1/4 cup cashew butter
2 tbsp oil (I used avocado oil)
Pinch salt
1/4 tsp baking soda
Chocolate chips
Instructions
1) rinse and drain chickpeas
2) add all ingredients (except chocolate chips) to a blender or food processor and blend until smooth
3) add chocolate chips and stir
4) transfer batter to a baking dish lined with parchment paper. Optional to sprinkle extra chocolate chips on top
5) bake at 350 for 30 min. Let cool completely, slice and enjoy!
