Easy Apple Crisp

6 honey crisp apples (peeled & chopped)
2 tbsp all-purpose flour
3 tbsp brown sugar
1 tbsp lemon juice
1 tsp lemon zest
1 tsp vanilla
1 tsp cinnamon
1/2 tsp all-spice
1/4 tsp nutmeg
1/4 tsp salt
1½ cups old fashioned oats (quick oats can be used, but may result in a slightly different texture)
3/4 cup butter (cold, chopped into very small pieces)
1/2 cup all-purpose flour
1/2 cup brown sugar
1 tsp cinnamon
1/2 tsp all-spice
1/8 tsp salt
1/3 cup caramel sauce (layered between the apples and the crumble)
vanilla ice cream (for serving)
Instructions
Pre-heat your oven to 375 °F and grease an 8x8-inch baking dish with butter or neutral cooking oil.
Begin by preparing the apples: peel and chop then add to a medium sized mixing bowl.Add all of the apple filling ingredients to the apples and gently mix to combine.
To your prepared baking dish, pour in the apple filling mixture then drizzle with 1/3 cup - 1/2 cup of caramel sauce.Set aside while you prepare your crumble topping.
To a separate medium sized mixing bowl add all of your crumble topping ingredients.
Squeeze and work the cold butter into the oat mixture until it is completely incorporated and has a chunky crumb like texture.
Pour the crumble topping overtop the apple filling and using your hands spread evenly and gently pat into the apple mixture.
Cover with aluminum foil and bake for 30-35 minutes or until you can see that the apples are beginning to bubble.Remove the aluminum foil and bake for another 10 minutes - or until the top begins to brown.
Let cool for 5 minutes and serve with vanilla ice cream if desired.
