Crinkle Almond Flour Sugar Cookies

Here’s what you need:
2 cups almond flour
1/2 tsp baking soda
5 tbsp grass-fed butter, melted and cooled
1/4 cup maple syrup
2 tsp vanilla extract
1 large egg
1/4 tsp salt
1/4 cup Christmas sprinkles
Granulated sugar for rolling
Instructions
Preheat oven to 350F.
Whisk the almond flour, baking soda and salt. Mix in the butter, syrup, egg and vanilla using a rubber spatula until combined. Fold in the sprinkles.
Place the granulated suave in a small bowl. Scoop 2-2 1/2 tbsp dough and roll in the sugar. Place on a baking sheet and repeat with remaining dough to get 8 large cookies. Press dough balls down to form a cookie shape (the cookies will not spread much in the oven) and top with additional sprinkles.
Bake for 9-12 minutes until top is cracked and bottoms are just barely golden. Let cool for 5 minutes before moving to a wire rack.
these are best eaten in 1-2 days and soften as they’re stored
