One Pan Harissa Feta Pasta

not even joking when I say I make this weekly! such a delicious easy meal that only takes 25 mins. Recipe inspired by @thegoodbite

Ingredients (serves 2):

2 chicken breasts

1 block feta

1 tbsp harissa paste

1 pack plum tomatoes

Salt & pepper to taste

180g dry weight pasta

Instructions

Preheat your oven to 180 degrees C. In a large tray add your chicken breast, feta and tomatoes. Cover the harissa paste over the chicken and feta with a little bit of olive oil and salt.

Pop in the oven for 25 mins or until your chicken has cooked. About 10 mins before it’s ready, put your pasta onto boil, I used rigatoni. Drain your pasta and save a bit of the pasta water to add to the sauce.

Using a fork, shred your chicken and mix the tomatoes and feta all together with a bit of pasta water to form a sauce. Add the pasta and mix well. Enjoy!
