Chicken Sausage Jambalaya

1 lb chicken breast, diced
1/2 lb smoked sausage, sliced
1 onion, diced
1 bell pepper, diced
1 stalk celery, diced
3 cloves garlic, minced
1 can (14 oz) diced tomatoes
1 1/2 cups long-grain white rice
3 cups chicken broth
1 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (optional)
Salt and pepper to taste
2 tablespoons olive oil
2 green onions, chopped (for garnish)
Instructions
Heat olive oil in a large skillet or pot over medium heat.
Add diced chicken and sausage. Cook until browned, about 5-7 minutes. Remove and set aside.
In the same skillet, add onion, bell pepper, celery, and garlic. Sauté for 5 minutes until vegetables are tender.
Stir in diced tomatoes, rice, chicken broth, thyme, smoked paprika, cayenne pepper (if using), and salt and pepper. Mix well.
Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, stirring occasionally, until the rice is tender and liquid is absorbed.
Add the cooked chicken and sausage back to the skillet. Stir to combine and heat through, about 5 minutes.
Garnish with chopped green onions and serve hot.
