Ouick coconut rice with prawns

Ingrédients

2tbsp oil

300g defrosted whole prawns

2 x 250g sachets coconut rice

6 spring onions, finely chopped

4tbsp toasted peanuts

1 tsp black sesame seeds

1 chilli, sliced (optional)

for the dressing:

zest and juice of 1 lime

ltbsp sugar or maple syrup

3tbsp soy sauce

3tbsp sesame oil

Instructions

1 Heat the oil in a pan. Fry the prawns until browned and cooked through. Add the rice to the pan with 80ml water, stirring well. Mix together dressing ingredients.

2 Stir on a high heat to bring the rice to temperature, then remove from the hob. Stir in the dressing and serve topped with the spring onions, toasted peanuts, sesame seeds and chilli, if using.
