Pork And Apples

Ingrédients

600g pork loin steak, trimmed of fat

2 Tbsp extra virgin olive oil

2 green apple, sliced

2 leek, sliced

500 ml vegetable stock

2 tsp Dijon mustard

100 g sour cream

500 g green beans, trimmed

Instructions

1. Salt and pepper both sides of the pork. In a frypan over medium heat, add oil and cook pork for 3-4 minutes on each side, depending on thickness of meat.

2. Remove from pan and keep warm.

3. In the same pan, saute apple and leek for 2 minutes. Meanwhile, steam green beans.

4. Add stock and dijon and cook down for a few minutes - apple should still be a bit crunchy. Take off the heat and stir through the sour cream.

5. Serve beans with pork topped with apple and leek

Notes

• Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat and serve.

• If following a gluten free diet, please check the label of the stock and mustard to ensure there are no sources of gluten
