Grinch Cake Mix Cookies

1 box Vanilla cake mix (I used Betty Crocker)
1/3 cup Vegetable oil
2 large Eggs
1/2 teaspoon Vanilla extract
Green gel food coloring (Add until desired Grinch-green color is achieved)
1/3 cup Confectioners sugar
1/3 cup Cornstarch
Candy hearts or red sprinkles (For Grinch heart decoration)
Instructions
Line a baking sheet with parchment paper and set aside.
In a large mixing bowl, combine cake mix, vegetable oil, eggs, and vanilla extract. Mix until smooth.
Add green gel food coloring and mix until the dough reaches a bright Grinch-green color.
Refrigerate the dough for 20 minutes. Do not skip this step.
Preheat oven to 350°F (175°C). In a separate small bowl, mix together the confectioners sugar and cornstarch.
Scoop chilled dough into balls and roll each ball thoroughly in the sugar-cornstarch mixture.
Place dough balls on the prepared baking sheet and gently press each one with the bottom of a glass to slightly flatten.
Add one candy heart to the top of each cookie.
Bake for 8–10 minutes. Do not overbake. Nine minutes is ideal.
Leave cookies on the baking sheet for 3 minutes, then transfer to a wire rack to cool fully.
Serve warm or at room temperature.
