Black Garlic Vinaigrette

◦30g Black Garlic
◦150g Shallot, sliced
◦15g Daily Dijon
◦200g Sherry Vinegar
◦600g Canola Oil
◦Season with salt and pepper
Instructions
1. Combine black garlic, shallot, dijon, and sherry vinegar in vitamix and blend on high completely.
2. Slowly start to pour in canola oil to emulsify. Careful not to split.
