A simple, flavorful bake packed with Greek-inspired ingredients like tomatoes, olives, oregano, and creamy feta. Great for breakfast, brunch, or meal prep.

What You'll Need (serves 4)

10 eggs

1½ cups chopped spinach

1 cup cherry tomatoes, halved

1 small red onion, diced

¼ cup kalamata olives, sliced

½ cup crumbled feta

1 tablespoon olive oil

1 teaspoon dried oregano

Salt and black pepper

How to Make It

Instructions

Heat the oven to 425°F and grease a round baking dish.

In a skillet, sauté the onion in olive oil until softened. Add tomatoes, oregano, salt, and pepper; cook 1–2 minutes. Stir in spinach until just wilted.

In a bowl, whisk the eggs with most of the feta and the olives. Add the warm veggie mixture and stir gently.

Pour into the baking dish. Sprinkle the remaining feta on top.

Bake for 22–25 minutes, until the frittata is set and lightly golden.

Let rest for 10 minutes before slicing and serving.
