Hot Chocolate Pudding Cake

160 g yogurt
120 g caster sugar
80 g oil
30 g cocoa powder
40 g melted dark chocolate
90 g hot water (to bloom cocoa + chocolate)
160 g all-purpose flour
4 g baking powder
2 g baking soda
½ tsp salt
Pudding Layer:
60 g brown sugar
40 g white sugar
20 g cocoa powder
200 ml hot water
Optional Topping:
100 g dark chocolate
200 g cream
Crushed pecans
Instructions
Whisk yogurt, sugar, and oil.
Bloom cocoa + chocolate in hot water, add in.
Fold in dry ingredients.
Pour batter, sprinkle pudding mix, pour hot water, don’t stir.
Bake 25–30 mins at 180°C.
Finish with ganache and pecans.
