Sushi Or Ceviche

Salmon 🍣 Avocado 🥑 Sushi Balls

Ingrédients

This is a large portion that gives at least 40 balls, you can of course halve the recipe and get more than 20 balls. They are quite filling too.

3 dl rice (We used jasmine rice, but you can obviously use sushi rice if you have it)

2 avocados in pieces

2 spring onions, the green finely chopped

300 g sashimi quality salmon, in small pieces

150 g cream cheese

1/2 cucumber, without seeds, in small cubes

2 tablespoons of lemon juice

Chili mayo:

75 g mayonnaise

1-2 teaspoon sriracha (to taste)

Asian marinade:

¼ cup soy sauce

2 Tbsp rice vinegar

1 Tbsp sesame oil

2 garlic cloves minced

1 Tbsp grated fresh ginger

Red pepper flakes

¼ cup avocado oil (neutral)

Instructions

Cook rice as directed on the package. Let it steam well so that the buns don't get too wet. Chop all the vegetables and cut the salmon into nice little cubes. Gently mix everything together in a large bowl. Place in the fridge to rest and firm up.

Before serving top with chili mayo, Asian marinade, Crispy fried onions, Ponzu sauce for dipping.
