Ingrédients

  • Zucchini / courgette

  • Tahini

  • Lemon

  • Nuts or seeds (pine nuts, pumpkin seeds etc)

Instructions

  • Slice the zucchini into ~1cm (thin but not too thin, you know?) slices

  • Prepare tahini to taste (mix raw tahini with lemon, water, salt and pepper until it's runny enough that it falls off the spoon, like honey) (do it to taste adding bits of each ingredient at a time, water and lemon are added roughly in a 2:1 or 1.5:1 ratio)

  • Toast nuts/seeds

  • Brush zucchini with oil (doesn't need much) and grill them in the forman!!!! If you don't have a foreman then a BBQ would be great but if not then I suppose you could use a pan 🤷‍♀️

  • Cook zucchini until you have nice dark griddle lines and it's soft all the way through (better to cook more than less FWIW)

  • Assemble zucchini cute on a plate, drizzle tahini on top and then sprinkle the nuts and seeds. If you want it to look cuter and not just drowned in tahini then put a layer of tahini on the bottom below the zucchini, then just drizzle a small amount of tahini on top!
