Cucumber Asian Salad
Serves around 4

1 chicken breast shredded
3 cucumber chopped
3-4 spring onions chopped plus extra to serve
For the sauce
1/4 cup crunchy peanut butter
1 tbsp rice vinegar
juice from 1/2 lime
1 tbsp soy sauce
2 teaspoon sesame oil
1 tbsp chili crisp oil
1 tbsp honey
2 tbsp sesame seeds plus extra to serve
Instructions
Chop cucumbers and pat dry with a napkin.
Make sauce, combined all ingredients
Make salad, combine chicken, cucumbers and spring onions and coat well with sauce
Top with extra chilli oil, sesame seeds and spring onions
Best served immediately
