Orange & Sultana Scones

250g self raising flour
80g butter
75g sultanas - raisins if you prefer
50g sugar
zest of a medium orange
The following should weigh 150-155g in total - mls weigh the same as grams - use your weighing scales!
2 eggs - about 100g
1 tsp vanilla
10ml orange juice or Cointreau
40ml milk
Instructions
Preheat oven to 200°C fan
See video - mix dry ingredients together, using a food processor or see my YouTube video on crumble to see method for crumbing butter and sugar.
Mix wet ingredients together.
Combine everything in the dry bowl - keep back a small amount of the wet mix - you may not need it.
Flour your worktop and tray.
Pour dough out. Add a little flour on top and knead gently - see video.
Cut into shapes making sure the scones are very close together without actually touching, and bake for 12-15 minutes. Glaze if you wish with a little milk.
