You will need:
300g bread flour.
180g warm water.
3g instant yeast.
10g sugar.
1/2 tsp salt.
2 tbsp olive oil.
1 tbsp sour cream.
Instructions
Pita Bread (Stovetop instructions)
1. In a large bowl, mix together all the ingredients except the salt, olive oil, and sour cream. Cover and let it rest for 30 minutes (this helps hydrate the flour).
2. Add the salt, olive oil, and sour cream. Knead until the dough is smooth and non-sticky.
3. Cover and let the dough proof until doubled in size.
4. Punch down to release air, then divide into 8 equal pieces. Shape each piece into a ball.
5. Cover and let the balls rest for 1 hour.
6. Roll each ball into a circle about ¼ inch thick.
7. Let the rolled-out dough rest for 30 minutes, until slightly puffy.
8. Heat a skillet over high heat until very hot. Place a dough circle in the skillet, cook until it begins to puff, then flip and cook the other side. Repeat with the rest.
✨ Note: The salt is added later because it can slow down yeast activity and gluten development if mixed in from the start. Allowing the dough to hydrate first gives you a softer, more extensible dough that puffs beautifully.
