Dirty Rice with Ground Beef

1 tablespoon olive oil
1 pound ground beef
1 small onion, finely diced
1 green or red bell pepper, diced
1 cup long-grain white rice
1 (14.5 ounce) can diced tomatoes, undrained
1 (10.75 ounce) can condensed chicken broth
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon Cajun seasoning (optional)
1/4 cup chopped fresh parsley (optional)
Instructions
Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess grease.
Add onion and bell pepper to the pot and cook until softened, about 5 minutes.
Stir in rice, diced tomatoes (undrained), chicken broth, salt, pepper, and Cajun seasoning (if using).
Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and liquid is absorbed.
Stir in parsley (if using) before serving.
