Florentine Lasagna Rolls

Ingrédients

6 lasagna noodles, cooked & drained

12oz frozen spinach soufflé

6 1oz slices Monterey Jack cheese, halved

6 hard cooked eggs, sliced

2 tbsp lemon juice

3 egg yolks

1/8 tsp paprika

1/2 cup butter

Little milk

Instructions

Preheat oven to 400 degrees.

Cut noodles in half.

Cut soufflé in half lengthwise, then crosswise into 6 sticks.

Place 1/2 slice cheese on 1/2 noodle, then 1 stick spinach soufflé.

Overlap egg slices before spinach soufflé.

Fold noodles and secure with toothpick.

Seam side down in greased pan.

Brush tops with a little milk.

Bake covered for 30-35 minutes.

Place yolks, lemon juice, and paprika in blender, quickly turn on/off on high speed.

Heat butter to boiling.

Slowly pour butter into yolk and lemon blend until thickened.

Remove picks and cover with sauce.
