Baked Potato Soup, Patti Dean

4 lg baking potatoes
⅔ cup butter
⅔ cup all purpose flour
6 c milk
¾ tsp salt
½ tsp pepper
4 green onions - chopped
12 slices cooked bacon - crumbled
1¼ cups shredded cheese
1 8 oz sour cream
Instructions
Wash potatoes and prick several times with fork; bake at 400º for 1 hr or until done. Let cool. Cut potatoes in half lengthwise; scoop out pulp and set aside.
Discard skins.
Melt butter in heavy saucepan over low hear; add flour stirring until smooth.
Cook 1 min stirring constantly. Gradually add milk cook over med hear, stirring constantly until mixture is thick and bubbly. Add potato pulp, salt, pepper, 2 tbsp green onion, 1/2 c bacon and 1 c cheese.
Cook until thoroughly heated and stir in sour cream.
Add extra milk if necessary for desired consistency.
Serve with remaining green onions, bacon and cheese
