Ingrédients

  • 1-2 lbs small yellow or red potatoes

  • olive oil spray or brush with olive oil

  • salt and pepper to taste

  • 1-2 tablespoons fresh rosemary finely diced

Instructions

  1. boil potatoes in salted water until fork tender

  2. smash - plate on cookie sheet and gently smash each potato with the bottom of a glass

  3. season - spray or brush with olive oil sprinkle with salt and pepper and diced rosemary

  4. bake at 400 for 20-30 minutes or until golden and crispy
