Easy Slow Cooker Italian Fish Stew

2-3 fillets white fish (i.e. Tilapia, Cod, Haddock Flounder), cut into 1-inch pieces
1-2 Bell peppers, cut
1.5 cups low-fodmap bouillon-based or FODY vegetable soup base, broth (i.e. Knorr chicken bouillon, Better than Bouillon)
2 Roma tomatoes, diced (or 14oz can of diced tomatoes in their juices if want more tomato-y-ness)?
2 caps ACV
1 English cucumber, not mini
1 tablespoon Italian herbal seasoning, sub with low-FODMAP herbal seasonings
1 teaspoon salt (or more)
1/2 teaspoon pepper
Instructions
Add all the ingredients to the slow cooker. Stir to mix well.
Cook HIGH 2-3 hours or LOW 4-6.
