Chickpea Of The Sea Dip Or Sandwich

Ingrédients

3 cans chickpeas, drained & rinsed

1/2 cup mayo

2 tbsp Dijon mustard

3 tbsp rice vinegar

2 tsp old bay seasoning ?

1/2 cup chopped celery

4 tbsp of scallions or onions

Pinch cayenne pepper

1 tbsp lemon juice

Fresh ground pepper

Maybe add a pack of seaweed

If making into a sandwich:

Whole grain or artisan style bread

Clean lettuce leaves

Instructions

Place chickpeas in food processor & pulse 2-3 times to roughly chop.

Add remaining ingredients & pulse a few more times to incorporate.

Add to bread along with lettuce if making a sandwich

Notes

This was sent to me with major modifications from the original recipe. Looked like a good lunch option.

This made a TON. Great for multiple people but I will scale down for lunches/travel.
