Bitter Melon Sambola

Ingrédients

1 bitter melon. white middle removed and green skin finely diced

1 red onion, finely diced

½ green apple, finely diced

1 tomato, diced

1 long green chilli, seeds removed, finely diced

½ cup desiccated coconut

pinch sea salt

3 limes, juiced

1 teaspoon ground black pepper

Pinch ground Maldive fish flakes (optional)

3 teaspoons curry leaf oil

Instructions

Add all ingredients into a large bowl. Toss to coat well. Give the Sambola a taste and add more salt or lime juice if needed.
