Healthy Avocado Crunch Salad
Serves 4

2 large seedless cucumbers (shaved into ribbons or thinly sliced), or 4–6 mini seedless cucumbers
½ small red onion, sliced
1–2 avocados, cubed
½ cup toasted walnuts, chopped
½ cup pomegranate seeds
¼ cup fresh parsley, finely chopped
Zest and juice of 1 lemon
2–3 tbsp olive oil
Salt & black pepper, to taste
1–2 tsp sumac
Instructions
Thinly shave or slice the cucumbers and place in a large bowl
Add the sliced red onion and cubed avocado
Add the chopped walnuts and pomegranate seeds
Stir in the fresh parsley
Add lemon zest, lemon juice, olive oil, salt, pepper, and sumac directly over the salad
Gently toss until everything is evenly coated
Serve immediately for best freshness
