Mozzarella Bean Breakfast Wrap

Ingrédients

  • 1 large whole grain wrap

  • A small handful of spinach

  • 50g (1/2 cup) mozzarella, grated

  • A couple of tomato slices

  • 5 Kalamata olives, pitted and halved

  • 40g feta

  • 80g (~1/3 cup) canned cannellini beans, drained and rinsed

Drizzle of hot honey or sprinkle chilli flakes if you like

Instructions

  1. Preheat your sandwich maker.

  2. Cut wrap once from the centre of it to the edge.

  3. Then place spinach in one quarter of wrap,

  4. mozzarella in the next quarter,

  5. tomato slices/olives/feta and hot honey on the next quarter.

  6. Place beans in the final quarter.

  7. Carefully fold each section over each other starting with the spinach quarter.

  8. Place into your sandwich maker until the cheese has melted and the wrap is golden and toasted. Enjoy!
