Easy Blueberry Scones Recipe

These are tender + flaky like a biscuit, but with that sweet glazed-donut vibe. Never buying store-bought again. Period.

Blueberry Scones (with simple vanilla glaze)

Scones:

2 cups all-purpose flour

1/3 cup granulated sugar

2 tsp baking powder

1/4 tsp baking soda

1/2 tsp salt

1/2 cup unsalted butter, frozen

1/3 cup plain Greek yogurt

1/3 cup heavy whipping cream

1 large egg

1 tsp vanilla extract

1 cup blueberries (fresh or frozen)

Glaze:

1 cup powdered sugar

1–2 tbsp milk

Optional but so good: 1/2 tsp vanilla, or 1 tsp lemon juice + a little zest

Instructions

Preheat oven to 400°F. Line a baking sheet with parchment.

In a large bowl, whisk flour, sugar, baking powder, baking soda, and salt.

Grate frozen butter into the bowl and cut it in with a fork or pastry blender until crumbly.

In a separate bowl, whisk yogurt, cream, egg, and vanilla.

Pour wet into dry, add blueberries, and gently fold until big clumps form.

Knead in the bowl just a few times until it comes together (don’t overwork it).

Turn onto a lightly floured surface, pat into an 8-inch circle, and cut into 8 wedges.

Transfer to baking sheet and bake 16–18 minutes, until golden.

Cool 10 minutes. Whisk glaze, drizzle, inhale.
