Beef and Brussels Sprouts Stir Fry

1 lb flank steak
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons peanut oil
1/2 cup beef broth
1 tablespoon brown sugar
2 tablespoons soy sauce
2 teaspoons lime juice
1/2 teaspoon cornstarch
1 lb Brussels sprouts trimmed and halved
1 tablespoon grated ginger
2 cloves garlic, minced
Hot cooked rice
Instructions
Thinly cut steak diagonally the grain. Sprinkle with salt and pepper.
Heat a large skillet. Add on tablespoon oil. Add steak in batches, letting them cook over high heat for 2-3 minutes or until meat is no longer pink. Transfer meat to a plate and set aside. Wipe out skillet.
Add the remaining tablespoon of oil. Stir-fry Brussels sprouts for 2-3 minutes or until lightly browned.
Add ginger and garlic stirring for 1 minute.
Meanwhile, in a small bowl, combine broth, sugar, soy sauce, lime juice, and cornstarch. Whisk until smooth.
Add liquid to sprouts and bring to a boil. Cook until sprouts are tender, about 4 minutes. Stir in steak.
Serve over rice.
