250g chorizo
300g (1 1/2 cups) white long-grain rice
70g (1/4 cup) tomato paste
Massel Beef Liquid Stock
120g (1 1/2 cups) grated tasty cheese
Instructions
Step 1
Preheat oven to 180C/160C fan-forced.
Step 2
Heat a large flameproof casserole dish over medium-high heat. Cook chorizo, stirring, for 5 minutes or until starting to brown. Add rice and stir to coat. Add tomato paste and stir to coat the rice.
Step 3
Stir in stock and season with pepper. Bring to the boil. Cover. Transfer dish to oven. Bake for 15-20 minutes or until rice is just tender.
Step 4
Stir rice to gently combine. Sprinkle with cheese. Bake for a further 5-10 minutes or until cheese is melted and golden, and rice is tender. Serve.
