If You Secretly Like Nutella , but You Know That It’s an Ult

Ingredients in Nutella show you that it is almost 60% sugar which is added to the palm oil along with skimmed milk powder and less than 15% hazelnuts. The emulsifiers are probably added back in to give a creamier mouth feel and to prevent separation.

Nutella Ingredients are as follows:

Ingredients: Sugar, Palm Oil, Hazelnuts (13%), Skimmed Milk Powder (8.7%), Fat Reduced Cocoa (7.4%), Emulsifier: Lecithins (Soya), Vanillin

It’s not terrible, but it’s got a very high sugar content compared to the amount of hazelnuts you will find in there.

Here’s an easy way to make your own.

Home-made Nutella

250 g whole hazelnuts, shelled

2 tablespoons raw cacao powder

5 Medjool dates, softened in hot water

75 ml plant milk

Optional, maple syrup to taste.

This recipe has 28g of fibre jar and 48g protein. While it is likely to be a match for match when it comes for calories, the calories is in my Nutella are coming from healthier sources such as nuts, fibre rich dates and raw cacao powder all of which are fantastic foods in their own right.

To make this you will need a good food processor (as a caveat, if you do not have a strong food processor, replace the nuts with a ready made nut butter eg peanut/ almond or hazelnut!)

Instructions

Turn the oven to 180° C fan.

Roast the hazelnuts for 8 to 10 minutes until fragrant and just beginning to turn golden.

Add them to a food processor and process on a medium speed for around five minutes. At first they will become very dry and then slowly the oils will release from the nuts giving you a creamy nut butter.

4.Add the soaked and drained Medjool dates with the cacao powder and process until smooth and creamy. Add sufficient nut milk to give you the desired texture.

Because this version isn’t rammed full of sugar, it won’t keep as long. My advice would be to keep it in the fridge and use it within a week or so. You can also freeze it into smaller pots if you prefer.
