San Choy Bow / Lettuce Wraps

Ingrédients

2 garlic cloves, crushed

2cm ginger, finely grated

500g Extra Lean pork mince

1/2 brown onion

1 carrot, chopped

4 mushrooms, chopped

1 cup beansprouts

Sprinkle of shallots (optional)

10 large lettuce leaves

Small red chilli (optional)

Marinade:

1 ½ tbsp light soy sauce

2 tbsp oyster sauce

1 tsp sesame oil

1 1/4 tsp corn flour

2 tbsp water

Instructions

Heat wok over high heat until hot. Add oil and throw in garlic, ginger, onion, carrot and mushrooms. Stir fry until vegetables soften.

Add the pork and stir-fry for 2 to 3 minutes or until pork just changes colour

Mix the water and corn starch together and then add to the rest of the marinade ingredients.

Spoon pork mixture into lettuce leaves. Sprinkle with shallots and beansprouts.
