A Wholesome Twist on Classic Quiche, This Version Features B

750g baby potatoes
1 tbsp olive oil
1 bunch spring onions, chopped
100g spinach, chopped
1 red pepper chopped
150g cherry tomatoes
8 eggs
120ml milk
2 tbsp chives, chives
4 tbsp basil, chopped
20g cheddar grated
10g Parmesan grated
Salt and pepper to season
To serve
Baby leaf salad
Tomatoes
Cucumber

Instructions
Preheat oven to 180°C
Boil the potatoes in salted water until soft 15-20
Add olive oil to a pan and add spring onions, red pepper and spinach. Season with salt and pepper and cook for a few minutes until soft.
Then stir in cherry tomatoes and set aside.
Lightly grease your 8-inch baking tin
Add the boiled potatoes to the dish and roughly squash with a glass to cover base
Add in the cooked vegetables on top of the potato base.
in a jug whisk together 8 6 eggs and milk and season with salt and pepper then pour the mixture evenly over the vegetables.
Sprinkle over chives, basil and cheese
Bake for 30 minutes covered and then remove the cover and bake for 15 more minutes until golden and the egg is set!
Leave it to cool before removing from tin and slicing
Serve with a side salad!
