Ingrédients

10 long dried red chiles, seeded and chopped

1 tablespoon ground coriander seeds

1 teaspoon ground cinnamon

1 teaspoon ground cumin seeds

1 teaspoon ground cloves

2 whole star anise

1 teaspoon ground cardamom

1 teaspoon freshly ground white pepper

6 pink Thai shallots or 3 regular, chopped

7 garlic cloves, chopped

2 inches fresh lemongrass, chopped

½ inch fresh galangal, peeled and chopped

1 tablespoon chopped kaffir lime skin or finely chopped lime leaves

1 tablespoon shrimp paste

1 tablespoon salt

Instructions

Using a mortar and pestle, grind the dried spices. Add the remaining ingredients, blending after each addition, to form a paste.
