Spaghetti with Garlic & Spinach

8 ounces of spaghetti
2 tablespoons of olive oil
4 cloves of garlic, thinly sliced
6 cups of fresh spinach
1/2 teaspoon of red pepper flakes (optional)
Salt and pepper to taste
Freshly grated Parmesan cheese for serving
Lemon wedges for serving
Instructions
Boil a large pot of salted water. Add the spaghetti and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water before draining.
In a large pan, heat the olive oil over medium heat. Add garlic slices and sauté for 1-2 minutes until fragrant and lightly golden. Be careful not to burn the garlic.
Add the spinach to the pan and cook for 2-3 minutes, stirring frequently until wilted. If desired, add red pepper flakes for a bit of heat.
Combine the drained spaghetti with the garlic and spinach in the pan. Pour in a bit of the reserved pasta water to form a light sauce. Season with salt and pepper, mixing well.
Serve immediately, topped with freshly grated Parmesan cheese and a squeeze of lemon juice for added brightness.
