Smoked BBQ Meatloaf

– 2 lbs ground pork

– 2 lbs ground beef

– 1 medium white onion, diced

– 4 cloves garlic, minced

– 1 green bell pepper, diced

– 12 Ritz crackers, crushed

– 3 eggs

– 2 Tbsp Worcestershire sauce

– Sweet Preacher pork rub

– BBQ sauce

Instructions

Set up grill for indirect cooking by pushing coals to one side. Add a chunk of hardwood and preheat grill to 250°F.

In a large bowl, mix ground pork, ground beef, onion, garlic, bell pepper, crushed crackers, eggs, and Worcestershire sauce by hand. Form into a loaf.

Place meatloaf on a half sheet pan and generously season with pork rub.

Move pan to indirect side of grill and smoke until internal temperature reaches 115°F.

Brush meatloaf with BBQ sauce and continue cooking until internal temperature reaches 155°F.

Remove from grill and let rest for at least 15 minutes before slicing.
