Eve’s Pudding

For the apples

700g apples (Bramley or a mix), peeled, cored & sliced

1 tsp ground cinnamon

Zest of 1 lemon

1 tbsp lemon juice

100ml apple juice or water

60g caster sugar @ocadouk

For the sponge

115g salted butter, softened

115g caster sugar

2 large eggs

115g self-raising flour

1 tsp vanilla extract

1 tbsp cinnamon powder

1/3 tap nutmeg powder

Pinch of salt @maldonsalt

Instructions

Preheat oven to 180°C (160°C fan). Butter a medium baking dish. Add the apples, cinnamon, lemon zest, lemon juice, apple juice and sugar to a saucepan. Cook over a medium heat for 8–10 minutes until the apples start to soften but still hold their shape. Tip into your baking dish.

In a bowl, cream together the butter and sugar until pale and fluffy. Beat in the eggs one at a time, then add the vanilla. Fold in the flour, spices and salt until smooth.

Spoon the sponge batter over the apples and gently spread to cover. Bake for 30–35 minutes until golden and springy on top.

Let it sit for 5–10 minutes before serving. Best served warm with plenty of custard, cream, or ice cream.
