Apple & Custard Scones

80g cold butter

50g custard powder

200g self raising flour

30g caster sugar (optional)

3/4 tsp baking powder

2 medium sweet apples chopped into small pieces

2 medium eggs - 100g

1 tsp vanilla extract - 5g

approx 55g full fat milk - 55ml

Preheat oven to 200°C

Blitz flour, butter, custard and baking powder together to a crumb texture. Add the chopped apples - see video.

Mix eggs, vanilla and milk in a separate bowl and stir until combined.

Add 3/4 of this mix to the dry and use a fork to bring it together. If needed, add more of the egg mix.

Add flour to the work surface. Put dough on top then add more flour. Knead as on video. I cut into squares and rectangles. Sit them very close together in the tray so they rise instead of spreading out. Cook for 10-12 minutes, or until nicely browned on top. Serve warm with butter and jam. They freeze beautifully too!
