Tahini Sweet Potatoes

3 pounds sweet potatoes, any color (6 small or 3 large), scrubbed
6 tablespoons unsalted butter, at room temperature
2 tablespoons tahini
1 tablespoon soy sauce
2 teaspoons toasted sesame oil
1/4 cup fresh lime juice, plus wedges for serving
Kosher salt, freshly ground pepper
Flaky sea salt and toasted sesame seeds, for serving
Instructions
Bake sweet potatoes until tender. Mix remaining ingredients and top potatoes.
