Sticky Pork Noodle Stir Fry
INGREDIENTS - serves 4
500g lean pork mince
200g dry noodles of your choice
1 tablespoon extra virgin olive oil
1 heaped tablespoon of chopped garlic (5 cloves)
1 tablespoon minced ginger
1 bunch of broccolini, roughly chopped
200g shredded coleslaw mix
3 spring onions, finely chopped
½ cup chicken or beef stock
To serve: crispy chilli oil, sesame seeds and sliced spring onion (optional)
Stir Fry Sauce:
⅓ cup hoisin sauce (or char sui sauce)
⅓ cup salt reduced soy sauce
1 ½ tablespoons sesame oil
1 ½ tablespoons brown sugar
NOTES: Add variety with different vegetables - try chopped Asian greens, baby corn or capsicum. Choose gluten free noodles if needed like flat rice noodles.
Instructions
Prepare noodles according to package instructions. Drain well and set aside.
Prepare Stir Fry Sauce by whisking all the ingredients together in a small bowl or jug.
Heat oil on high in a large frypan or wok.
Add lean pork mince and cook, breaking it up with a spoon until well browned or approximately 5-7 minutes.
Add finely chopped garlic and ginger. Cook, stirring for 1 minute.
Add stir fry sauce to the mince. Cook, stirring for 2 minutes to coat the pork and caramelize it.
Add chopped broccolini and cook stirring for 1 minute.
Add coleslaw and spring onions and cook for a further 2 minutes.
Add cooked noodles and stock and stir fry for a few minutes to combine the ingredients and warm the noodles.
Serve with a sprinkle of sesame seeds, crispy chilli oil and more spring onion.
