Ingrédients

4½ cups (560g) flour

1 tbsp instant yeast

1½ tsp salt

3 tbsp oil

2 tbsp melted butter

1½ cups (350ml) lukewarm milk

1 tbsp honey (15g)

Instructions

In a bowl, whisk together flour, yeast & salt.

In another bowl, mix oil, melted butter, milk & honey.

Add dry to wet and mix until a dough forms.

Knead by hand for 10 mins or in a mixer until smooth, elastic & no longer sticking to bowl.

Cover with a damp towel & let rise 1–1.5 hrs or until doubled.

Punch down dough, transfer to floured surface.

Divide into 5 equal pieces (~200g each).

Flatten each into a circle, roll into a log & seal edges.

Roll logs to 8” length & place seam-side down on lined tray.

Brush with milk & sprinkle parmesan, herbs or seeds.

Score tops with a sharp knife.

Cover with a cloth and let proof again for 30 mins until puffy.

Bake at 200°C (390°F) for 10–15 mins until golden.

Let cool slightly & enjoy!
