Hello Dollies Cheesecake

Ingrédients

1 ½ cups graham or crushed cookie crumbs

¼ cup softened butter, coconut oil or margarine

16 oz light cream cheese cut into cubes

2/3 cup sweetened condensed canned milk (freeze any remainder)

1/8 tsp salt

1 tsp vanilla extract

2 eggs

Topping

¾ cup semi sweet chocolate chips

¾ cup coconut  shredded

½ cup chopped pecans or almonds

Instructions

In a bowl add cookie crumbs and softened butter, coconut oil or margarine until mixture begins to hold together. Pat into 9” x9” square baking dish lined with parchment paper.

Cheesecake: in food processor or with handheld beater, add cream cheese, sweetened condensed milk, salt, vaniila and eggs. Purée well until smooth,  pour into crust.

Sprinkle over chocolate chips, coconut and chopped pecans.  Bake at 350 F  for about  20 – 25 minutes just until centre is still just a little loose. Do not overbake.

Cool by refrigerating then cut into squares. Enjoy!!
