Orange Loaf Cake

150ml Milk + Juice of half Lemon
150g Caster Sugar
2tbsp Orange Zest
1tsp Vanilla Extract
100g Melted Butter
50ml Orange Juice (freshly squeezed)
250g All Purpose Flour
2tsp Baking Powder
Instructions
Mix the milk and lemon juice. Set aside for 5 minutes. It’ll curdle and that’s exactly what you want. This is your homemade buttermilk.
In a large bowl, add the sugar and orange zest. Rub them together with your fingers until the sugar turns fragrant and slightly clumpy. This step matters the most to get that bright, orangey flavour.
Whisk in the vanilla, butter and orange juice. Then add the buttermilk mixture and mix until smooth.
Add the flour and baking powder. Fold gently just until you don’t see dry flour. Do not overmix please.
Pour the batter into the prepared tin. Bake for 45–50 minutes, or until a skewer comes out clean.
Let it cool at room temperature for a while and till then, we make the glaze which is basically just 150g powdered sugar, 2tsbp orange juice and 1/2tbsp lemon juice. Mix well and pour on the cooled cake. Again, let it set at room temp, you can also keep it in the refrigerated so the glaze can set before you slice the cake.
I topped the cake with some more orange zest cuz I am extra like that but yeah, now go make it. A treat for a gloomy day :)
