Ingrédients

1 cup + 1 tbsp Rice Powder

¾ cup + ¼ cup Coconut grated

¼ tsp Cumin

1 Garlic Pod crushed

1 Shallot crushed

1 tsp Salt

2 cup + 3 cup Water

Instructions

In a pot, boil 2 cup of water with cumin, salt, shallot and garlic.

Meanwhile, lightly roast rice powder.

Mix ¾ cup grated coconut with 1 cup roasted rice powder and set it aside.

Once water is boiled, mix 1 ¼ cup of water with rice powder to make a dough.

Mix ¼ cup of grated coconut with 1 tbsp rice powder and save for later.

Then make small balls with the rice dough.

Bring rest of the boiled water and 3 cup of water to boil.

Add all the rice balls and stir slowly.

Cook the balls for 10 minutes with occasionally stirring.

Add coconut rice mixture on to the boiling balls and mix well slowly.

Continue cooking for another 5 minutes with occasional stirring.

Pidi is ready to serve.
