Ingrédients

For the sauce:

2lbs ground lean beef

2Tbsp @algaecookingclub oil

1 red onion diced

4 cloves garlic minced

3Tbsp tomato paste

1 cup dry red wine

2 cups beef stock

2 ½ cups tomato puree

1Tbsp sugar

1 large cinnamon stick

3 bay leaves

1/4tsp ground clove

1 ½ dry oregano

Salt & Pepper to taste

For the béchamel:

100g butter

3/4 cup flour

4 cups milk

1tsp ground nutmeg

2tsp salt

4oz graviera cheese grated

2 eggs separated

Make sauce and bechamel as seen

Cook pasta, toss in whipped egg whites

Layer in oven safe dish

Top with sauce, then bechamel

Grate more cheese over the top

Instructions

Bake at 350f for ~45 minutes until golden

Let rest for 30 minutes before cutting
