Vegan tomato cream sauce

Ingrédients

1c Raw cashews

1 Large onion

3-4 Ribs celery

4 Cloves garlic

1 14oz can diced tomato

1Tbs Better Than Bullion vegetable stock paste

Salt & pepper & additional veggie paste to taste.

Instructions

Soak cashews in hot water for 30 minutes

Dice & sautee onion and celery until mostly softened. Add minced garlic and saute for another 1-3 minutes.

Blend tomatoes and soaked cashews on high speed to create a cashew cream. Add sauteed veggies, stock concentrate, and blend. Adjust with salt, pepper and/or additional stock to taste.
