This recipe is converted from grams so these are rough US cup measures

Chris’s Fruit Scone Recipe

500g | 4 cups of Plain Flour

30g | 3 heaped tsp of Baking Powder

Pinch of Salt

80g | 1/3 Cup of Sugar

100g | 1/2 Cup of Butter

2 Eggs

200ml | 1 Cup of Buttermilk (approx)

150g | 1 cup of Raisins

If you have any issue with the flavor you can also use organic aluminum free baking powder and bake right away once shaped. If you can’t find that you can reduce the baking powder to 20g or substitute with self raising flour.

Instructions

Add a drop more buttermilk if needed as some flours absorb and hydrate differently

Eggwash - 1 egg yolk mixed with a pinch of salt and sugar

Baking powder already contains an acid unlike bicarbonate of soda. So you can use either regular or buttermilk. For flavor purposes I would suggest buttermilk though

I find that buttermilk also makes them soft and fluffier.

For a buttermilk substitute add 1.5 tbsp of vinegar or lemon juice to some full milk or milk of your choice. Stir and let it stand for about 10 minutes before adding it to the dry ingredients. You can also use some natural or Greek yoghurt thinned out with a drop of regular milk

Bake at 200 C / 390F for 18 minutes (conventional oven)

Fan - 180 C / 355F
