Budín de Elote
This is DENSE. Like a set pudding. The crumb is not like a cake. Drizzle with cajeta or honey and eat warm. HEAVEN with your morning latte.
2 ears of corn, kernels removed
6 tbs whole milk
6 tbs unsalted butter
1 cup sugar
2 tbs honey
3 eggs
1 tbs avocado oil
2 teaspoons vanilla extract
1 cup flour
1 teaspoon baking powder
Pinch of salt
Instructions
Preheat oven to 350°F.
Blend milk and corn kernels until smooth and set aside. Using hand held mixer, beat butter and sugar until creamy. Add eggs one at a time until fully incorporated. Beat in honey, vanilla and oil. Add flour, baking powder and a pinch of salt.
Butter a spring form pan and line with wax paper. Butter the wax paper. Por batter into pan. Bake until tester inserted into center comes out clean, about 1 hour. Cool slightly and flip onto serving plate. Remove wax paper. Eat! Maybe with a drizzle of cajeta or some extra whipped butter. Yum.
